Our bok choy is growing rapidly! We are now able to harvest the outer older leaves, while leaving the younger leaves. Removing these individual leaves helps maintain continuous development and harvest of the crop as a whole. In the field we actually tasted our leafy green, it was surprising how "buttery" it was. We are proud of how strong this crop is growing in our plots especially in comparison to our other leafy greens that aren't doing too well in our low tunnels.
That's surprising that leafy greens would do better outside of the low tunnel. Our low tunnel greens are large, but have lots of pest problems. Maybe pests are getting trapped inside the tunnel and wreaking havoc.
